Breckenridge, famous for its stunning mountain views and top-tier skiing, has just made a name for itself in the culinary world. On June 10th, at the prestigious James Beard Awards ceremony in Chicago, our very own Chef Matt Vawter won Best Chef Mountain Region, cementing Breckenridge’s place on the food map.
The award ceremony was an unforgettable experience, and I had the privilege of being there. My life partner, Cameron Baker, is Matt’s business partner and Chef De Cuisine at Rootstalk & Radicato. It was a proud moment shared with Patrick Murphy, Matt’s other business partner/Director of Hospitality, and Teddy Lamontagne, the GM of Rootstalk.
The Award-Winning Chef
Chef Matt Vawter’s dedication to his craft and his innovative approach to cuisine have earned him this incredible honor. His passion for using locally-sourced ingredients and his ability to create dishes that resonate with the spirit of the Rockies set him apart. The James Beard Award is a testament to his talent and hard work, and it’s a win not just for him but for the entire Breckenridge community.
Discovering Breckenridge’s Dining Scene
If you haven’t explored Breckenridge’s dining scene yet, now is the perfect time. Here’s a taste of what you can expect:
- Rootstalk – Home to our James Beard Award-winning chef, this restaurant offers a seasonal menu that highlights the best of local produce and artisanal products.
- Radicato – Rootstalk’s sister restaurant serving up family style traditional Italian. The handmade pasta is to die for.
- Blue River Bistro – A modern bistro open for lunch and dinner serving up classics including my favorite chicken sandwich.
- Hearthstone – A longtime favorite in Breckenridge. This spot features naturally-raised beef and elevated American cuisine.
Matt Vawter’s James Beard Award win is a milestone, but it’s only the beginning. Next time you’re in Breckenridge, take the opportunity to explore the dining scene and taste for yourself why this mountain town is now a celebrated food destination. Whether you’re a local or a visitor, there’s always something new and delicious to discover. Bon appétit!
