The new restaurant about to open in the old Comida space in the Stanley Marketplace, “Molino Chido” is set to open in mid November. I popped by to get the scoop and share it with you.  

The first thing I learned is the restaurant has some serious chef star power behind it. Michael Diaz de Leon and Tommy Lee are known around Denver for their past successes and awards: De Leon landed a Michelin star as the chef at Bruto, and Tommy Lee is the chef behind the Uncle ramen restaurants and Hop Alley, the modern Chinese restaurant in RiNo with multiple Michelin Bib Gourmand awards. (Note: They are yet to win any Scoopie Awards…but maybe next year!) At Molino Chido, De Leon is focused on the food and drinks, Lee will be more on the administrative side. I also learned that Michael is from El Paso, just a short drive from my hometown of Las Cruces, NM.  I’m sure I’m bias, but the area has the best mexican food in my opinion, which only makes me more excited to try their restaurant!

As for the food: Molino Chido roughly translates to “cool mill” and it’s inspired by Mexico City-style taquerias. Walk by the space now and you can see one key feature–a windowed room where their tortillas will be milled and made from scratch.  What a smart idea to open this process up so the public can see the tortillas being made and maybe even get a little sample from time to time.
